Chilaquiles
Crispy tortilla chips simmered in salsa, topped with eggs, cheese, and sour cream for a flavorful breakfast.
Ingredients
- 1 bag tortilla chips
- 1/4 cup sour cream
- 2 cups green or red salsa
- Cilantro (for garnish)
- 1 cup shredded cheese (optional)
- 2 eggs (fried or scrambled)
Instructions
- Heat salsa in a large skillet over medium heat.
- Add tortilla chips and stir to coat with the salsa. Let them simmer for about 3-4 minutes.
- Top with cheese and cook for another minute until the cheese melts.
- In a separate pan, fry or scramble eggs.
- Serve the chilaquiles with the eggs on top, a dollop of sour cream, and a sprinkle of cilantro.
